Riko is a sustainable food enthusiast from Japan. Her dream is to create a food culture that promotes the welfare of people and the environment. For her Rise project, she expanded the reach of a local soup kitchen to immigrant children and helped them integrate into the community. She has raised over 200,000 yen for her research into the use of Nattō in medicine and is committed to spreading Japanese food, Washoku, as a key to solving food and health issues. Riko plans to study food science at university with a focus on using vegetable soup stock's components to engineer nutritious foods sustainably.
